Ingredients
- 2 tbsp Butter melted
- 1 Lg Roasting Chicken or 6 lg Chicken Breasts split, boneless or bone
- 1/2 tsp Salt
- 12 Small White Onions
- 4 Sweet Potatoes peeled and cut into chunks
- 6 large Carrots peeled or equivilant of peeled baby carrots
- 1 lb Parsnips peeled
- 1/4 tsp Black Pepper
- 1/2 tsp Rosemary
- 3/4 cup Pure Maple Syrup

Instructions
- Place oven rack on lowest level, then preheat oven to 400 Degrees. Spread vegetables in a roasting pan. Brush melted butter over breast of chicken and sprinkle with salt, pepper, and rosemary. Place in oven and baste occasionally with maple syrup. When you run out of syrup, continue basting with pan juices. Roast until chicken is tender and crispy, golden brown, about 1 ½ hours. The vegetables will be sweet and soft. Remove chicken to a large serving platter and surround it with cooked vegetables. We have many more Maple Recipes featuring maple products.
