Ingredients
- 1 cup Flour Unbleached or All-Purpose
- 1/4 cup Brown Sugar
- 1 pinch Salt
- 8 tbsps Butter cold, unsalted
- 2 Large Eggs
- 3/4 cup Pure Maple Syrup
- 1 tsp Vanilla Extract
- 3 tbsps Flour Unbleached or All-Purpose
- 1 tsp Baking Powder
- 1/2 cup Walnuts chopped
- 1/2 cup Dates chopped
Servings: people
Instructions
- Preheat the oven to 325 degrees F. Combine the 1 cup flour, brown sugar, and salt in a mixing bowl. Rub with your fingers to mix. Cut the cold butter into the dry mixture until it is somewhat sandy in texture and begins clumping together. Transfer to an ungreased 8-inch by 8-inch baking pan, distribute evenly, then press into the bottom of the pan with your fingers. Bake in the middle of the oven for 25 to 30 minutes, until shaded with the edges starting to brown. Cool on a rack to room temperature. Beat the eggs until frothy in a large mixing bowl. Whisk in the maple syrup and vanilla. Combine the 3 tablespoons flour and baking powder in a sieve and shake it over the maple mix, whisking it in. Fold in the walnuts and dates. Pour over the crust, distribute evenly, and bake for 30 minutes, until a tester comes out clean. Cool on a rack, then cut into sixteen 2-inch squares.
