I am going to try to be better about posting a “Maple Recipe” once a month and apologize that I haven’t posted one since April.  I was thinking of the garden and fellow gardeners and how quickly we are approaching the end of that wonderful season and all the fresh vegetables.  I sure will miss them!  In thinking about that I thought about how I am always looking for a good recipe to use up some of my zucchini and if you have a garden I’m sure you know what I mean.  I also thought of the number of people that tell me that it is difficult to find recipes with Maple.  This recipe should those needs “Lemon Zucchini Bread”.  I sure hope you enjoy it!

I’m often asked what type of syrup I use to cook and bake with thought it would be a good time to share that also.  I always use a Grade B “Dark for Cooking Syrup” in all of my recipes so I get that rich maple flavor.
