Pineapple Upside Down Spice Cake

  • 1 Recipe Maple Johnny Cake
  • 7 Canned pineapple slices (rings)
  • 4 tbsp Butter unsalted
  • 1/3 cup Pure Maple Syrup
  • 1/3 cup Sugar

Instructions
  1. Preheat oven to 350 degrees F. Prepare the cake recipe from directions below, but do not mix the wet and dry ingredients together yet. Blot the pineapple slices dry and set them aside. Melt the butter in a 9-inch or 10-inch cast-iron skillet. Stir in the maple syrup and bring to a boil. Boil for 1 minute, stir in the sugar, and boil for 1 minute more. Remove from the heat and arrange the pineapple slices in the pan – 1 in the center and the rest around it. Set aside. Make a well in the dry cake ingredients and add the liquids. Stir, just until blended. Pour the cake batter over the pineapple slices. Bake for 30 minutes. Remove from oven and let sit for 2 minutes. Put a plate on top of the cake and invert. Serve hot or warm, with whipped cream or vanilla ice cream.  We have many more Maple Recipes featuring maple products.
