If you are like us, and have done gardening with kids, hopefully you can take the process one step further. This is a picture of the “Giant Pumpkin” that was grown by two of our grandchildren. They did win second place at the Giant Pumpkin Contest. No, we didn’t use this pumpkin for the pie but it’s all about teaching and learning. We hope you enjoy. Jeff & Lori
Ingredients
- 2 Eggs
- 3/4 Cup Pure Maple Syrup
- 3 Tbsp Brown Sugar (try subsituting Granulated Maple Sugar)
- 2 Cups Strained Pumpkin
- 1 can 12 Oz Can Evaporated Milk
- 2 Tsp Melted Butter
- 1/2 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1/4 Tsp Cloves
- 1/4 Tsp Ginger
- 1/2 Tsp Salt
- 1 Crust Unbaked 9" Pie Shell
Servings: Pie
Instructions
- Beat eggs, add sugar, spices and salt. Combine with pumpkin, maple syrup, milk and butter. Mix well. Pour into 9" pie shell. Bake 10 minutes at 450 degrees then lower to 350 degrees for 50 minutes more. Adapted from "New Hampshire Maple Recipes" recipe by Mark Parker
