Maple Parfait

Ingredients
  • 1 tsp Gelatin
  • 2 Eggs
  • 2 tbsps Water
  • 1/3 cup Pure Maple Syrup
  • few grains Salt
  • 1/2 pint Cream

Instructions
  1. Soak gelatin in cold water in top of small double boiler. Dissolve over hot water, then add egg yolks and beat until light. Add maple syrup slowly, beating all the time, then stir and cook over hot water until thickened. Cool, add salt, egg whites beaten stiff, and fold in cream beaten until thick. Freeze in mold surrounded with equal parts of ice and salt or in refrigerator trays.  We have many more Maple Recipes featuring maple products.
